Former sommelier and Prince Edward County winemaker, Freddie discovered his passion for wine in Manchester, UK, at Ivy Asia. In January 2020, he relocated to Toronto, a move that ultimately led him to Prince Edward County. He worked his way up to Assistant Winemaker and worked five consecutive vintages, crafting premium Chardonnay and Pinot Noir—wines now featured on the lists of over 40 Michelin-starred restaurants across Europe. During this time, he also achieved his WSET Level 4 Diploma, one of the wine world’s most recognised qualifications, mastering both theory and tasting.
Freddie's Philosophy
Wine isn't just a beverage. It demands attention, and it’s expensive to produce, sell, and drink—but it’s an experience like no other. Every variety has a personality, and every vintage offers the chance to taste something new. Beyond its history and geography, wine is the ultimate expression of taste. And once it’s gone, we’re always chasing the next.
