Louis Michel is known for making Chablis without any oak, so nothing gets in the way of the vineyard. The family began moving away from barrels in the late 1960s, long before it was fashionable, and by around 1980 everything was made in stainless steel. Montée de Tonnerre is widely seen as one of the very best Premier Cru sites in Chablis.

It's crisp and mineral, with lemon zest, green apple and that classic oyster-shell salinity. A pure, focused expression of Chablis.
