An Evening in Tuscany


There's a reason Tuscany and lesser known, but equally amazing Umbria has been poured at long tables for a thousand years. Trained sommelier Freddie Rae and culinary host Enid Grace invite you to a candlelit evening spent in the hills of central Italy — no rush, no ceremony, just wine and food the way the Tuscans and Umbrians have always meant them to be enjoyed.

The evening moves through seven wines, starting with a sample of Freddie's first release Skimming Bird, Chardonnay.

Following that, a sparkling Sangiovese to start, the kind that tastes like a stone terrace in late August, followed by a cool white. Sangiovese in more than one guise — the beating heart of the region, worn first as something bright and berry-lit, later as something older and more sun-baked, softened by time in oak. A darker pour as the night settles deeper. And something amber and honeyed to close, poured small and lingered over.

Alongside, six courses from Enid's kitchen — cooked the way Tuscans and Umbrians have always cooked, which is to say with restraint, with the season, and with a deep trust in a short list of ingredients. Bread torn by hand, still warm. Olive oil green enough to taste of pepper and cut grass. Beans slow-cooked with sage until they give up their shape. Pecorino from the hills south of Siena, aged until it crumbles. Tomatoes when they're worth eating and not a moment sooner. Wild fennel, rosemary pulled from the roadside, porcini gathered after autumn rain. Meat cooked long and low over embers, or hung to cure through the cold months. Chestnuts, chard, black cabbage, white beans — the quiet workhorses of a cuisine that has always been more peasant than palace, and is all the better for it.

Nothing precious. Everything considered. The kind of food that has kept Tuscan wine good company for centuries, each drawing something authentic and memorable out of the other.

We recently had the pleasure of attending an Italian wine dinner hosted by Freddie Rae and Enid Grace.   The dinner was held in Enid’s studio and featuring a multi course Italian dinner prepared for us by Enid and paired to Italian wines selected by Freddie.

What a wonderful evening- it was relaxed and absolutely without pretence. The intimate space, delicious food and carefully curated wines combined to create a memorable evening.

Freddie, as our host for the evening, introduced each wine and helped us understand more about the Italian wine regions and which attributes  of each chosen wine helped create a successful pairing with the food.  Enid not only spoke to us briefly about each course , but gave us insights into what made her unique preparations so special.

With only ten guests for the evening, the evening was convivial, and relaxed, with laughter, stories and insights being shared by all participants.   By the end of the evening Freddie and Enid had demonstrated to all of us the power of how food, wine and environment can create memories and friendships.   I can’t imagine a more enjoyable  evening.  Thank you Freddie and Enid!

I recently attended an Italian dinner where Fred handled the wine
pairings, and I have to say—it was excellent. His knowledge of wine is
impressive, and the way he explained each pairing with short stories and
context made it both informative and entertaining.
No long speeches, just the right amount of detail to keep it
interesting.

The food and wine were both top quality. You could tell a lot of thought
went into the matches—each one brought something extra to the dish.

What made the evening really stand out was how personal and relaxed it
felt. It wasn’t a big, noisy event. It was small, intimate, and had a
great atmosphere. You could ask questions, have a proper conversation,
and actually enjoy the experience.

Fred did a great job. I’d gladly attend another evening like this.
